The yellowing is only occurring in the leaves. The stalk look healthy. Therefore remove the yellow leaves and check the stalks for any signs of fungus or other pathogens. If the tops were removed from the roots because of a fungus, following the lucky bamboo propagating technique – dip cut end into rooting hormone and place back in the water. Give it a few weeks and new roots should form.
